Make your leftovers work for you.  Leftover shish kabob sandwiches pack protein and nutrition and take only 5 minutes to make.

Ingredients
  • Leftover shish kabobs or other cooked meat and vegetables
  • 1 Handful Arugula or mesclun lettuce
  • 2 Slices Multigrain bread or favorite roll
  • 2 Tablespoons Boursin garlic and fine herb cheese or favorite herb cream cheese
Instructions
  1. Toast bread.

  2. Slice the meat and vegetables into smaller, flatter pieces so that they lay nicely on the bread, that way you won’t lose a bunch of filling when biting into the sandwich.

  3. Put on a paper plate (or microwave safe plate), cover loosely and microwave in 30 second increments until it’s the temperature you like.

  4. Spread toast with the cheese, layer with the arugula or lettuce, top with vegetables and finally with second slice of bread.

    Bite and enjoy!

Recipe Notes

It’s always better to underheat than overheat the ingredients, otherwise they can get tough.
