Moist banana bread is super easy, simple, healthy and a delicious snack on the go
Preheat oven to 350 degrees. Grease loaf pan.
Stir flour, wheat germ, baking soda, cinnamon and salt in a small bowl.
Peel and mash the bananas in a small bowl.
Beat the sugar and eggs until creamy. If you use a electric hand mixer this will take about 3 minutes on medium speed. If you use a whisk or fork and do the mixing by hand it will take about 10 minutes. Then slowly add the oil while mixing.
Add the mashed banana and yogurt. Add dry ingredients and mix thoroughly. If adding nuts, chop them first and blend in.
Pour into prepared pan, bake for 50 minutes to an hour. Test with a toothpick that comes out clean.
If you don’t want to use wheat germ then add an additional ¼ cup of flour.
For donuts, you'll want to butter the donut pan well, including the raised hole part in case you overfill the wells. Fill just below the center raised hole, otherwise you'll end up with a round disk without a hole, and well, that's just not a donut! Bake for about 15-20 minutes or until a toothpick comes out dry.
