Ever want to take spaghetti on the go?  Make it into a spaghetti sandwich.  Ready in as little as 15 minutes.

Ingredients
  • 4 cups leftover spaghetti with red sauce or make fresh
  • 4 medium meatballs, leftover or from the chilled section of the grocery cut in half
  • 8 slices fresh mozzarella or bagged shredded cheese
  • 8 Tablespoons freshly shredded Parmesan cheese optional
  • 8 slices frozen garlic Texas toast
Instructions
  1. Line baking tray with parchment paper or foil for easy clean up.

  2. Follow box instructions for toasting the garlic Texas toast in your oven.  Usually at 425 degrees.  Bake 8 slices for 4 sandwiches.

  3. Remove 4 slices of Texas toast from the baking tray.  Now build the sandwiches on the remaining toasted bread on the tray.

    First layer with 2 pieces of fresh mozzarella, then about a cup of spaghetti, 1 meatball cut in half.  Place back in the oven for about 10 minutes or until heated through.  Cover loosely with foil.

  4. Remove from the oven, top the open face sandwiches with the reserved toasted Texas toast and serve with a green salad or Caesar salad.  You can even use the salad as a topping to the sandwich.

Recipe Notes

Tips For Spaghetti Sandwich With Meatballs:

Let leftover spaghetti noodles with sauce, meatballs and mozzarella cheese come to room temperature.  This is not a necessary step but helpful to speed up the reheating process, it will take about 30 minutes to bring to room temperature.
