Our pimento cheese stuffed pickled okra has two ingredients but a whole lotta attitude. If you are looking for an unusual appetizer that’s delicious, then you’ve found the perfect recipe.
Slice the okra pod lengthwise, being careful not to cut through the bottom. Remove most of the seeds and pat dry with a paper towel. Don’t worry if a few stray seeds remain.
Spread about a teaspoon of pimento cheese in the okra pod and lay on serving tray. You might have to press down so that the okra pod sits flat.
It’s nice to put a light sprinkle of paprika for color, not too much or it will flavor the appetizer.
Also sliced green onion or chives adds some nice color and a finishing touch.
