Our Pizza Quesadilla, or Pizzadilla, is so easy for a weeknight meal, snack or lunch. Ready in under 15 minutes!
Heat a frying pan over medium low heat. Add tortilla, spread 2 Tablespoons pizza sauce on one half of the tortilla. Add cheese, then pepperoni and finally the basil and chili flakes.
Cook until bottom of tortilla is golden brown, about 3 minutes. Fold the empty half over the filled half and finish cooking until cheese is melted.
Serve immediately or with extra pizza sauce for dipping.
Butter or Mayonnaise - I typically make the tortilla in a non-stick pan without any added fat to the pan. My boys added mayo or butter for the flavor.
For butter I cut about 1/2 a teaspoon and melt it in the pan, swirl and then add the pizza quesadilla.
For the mayo I spread one side of the tortilla, add the mayo side down to the skillet and then build the rest of the pizza quesadilla.
If Taking the Pizza Quesadilla On-The-Go - make sure to not put too much pizza sauce in the quesadilla or it will drip on you when walking.
Using one tortilla and not two - I used to make quesadillas with one tortilla on the bottom and another on the top. It's actually easier to make and much easier to eat if you use one tortilla and fold it over on itself like in the pictures in the post. Just saying......the one folded tortilla method will save your shirt from pizza sauce.
